Prawn Balichow Chicken Curry

Method

  1. Fry the onion and garlic in the oil for 1 minute, then add the chicken and cook until brown.
  2. Place the chicken and the vegetables into a casserole dish.
  3. Mix together the Prawn Balichow and the coconut milk and pour it over the ingredients in the casserole.
  4. Cover and bake in a moderate oven for about 45 minutes.
  5. Serve with steamed rice.

Ingredients

  • 2 chicken breasts, sliced
  • 1 large onion, diced
  • 2 cloves of garlic, crushed
  • 1 tablespoon olive or sesame oil
  • 1 carrot, sliced
  • 1 cup frozen or fresh beans
  • 1/4 cup of slivered blanched almonds
  • 1 can coconut milk
  • 4 tablespoons of Ferns’ Prawn Balichow Paste
